What are the K and M values meant for?

They are the conversion constants to convert from the raw value from the sensor to degrees. the raw value is multiplied with K and then M is added. This means that if the raw value is 73, the presented value will be 73 * 0.1 + 0 = 7.3 degrees.
The reason that these values are exposed is to give to possibility to calibrate the sensor a bit if you have a more exact thermometer to compare with. Then you can modify the values to adjust for errors in the specific sensor.
